This umeshu is crafted using a two-step brewing method with a luxurious combination of fully ripened and green Kishu Nanko plums. Great care is taken over time to bring out the pure, natural flavour of the plums themselves. By using plums that have been allowed to ripen to the very limit, it captures a rich aroma and mellow sweetness, adding remarkable depth to the umeshu. Unlike conventional styles, it is prepared with less sugar, allowing the natural sweetness of the ripe plums to shine through.

 

To further enhance the character of the plums, special attention is also given to the water. Ultra-soft natural spring water from Minami-Uonuma, with a hardness of just 7, is used. Known as some of the softest water in Japan, it brings out the finest qualities of Nanko plums to their fullest.
