Asian-style spicy Soba noodle salad 

Ingredients  (serves about 6)

For Salad: Half a green papaya, 2 shallots, 2-3 red chillies, half a bunch of mint, half a bunch of coriander, 5 lime leaves, 5 cm lemongrass.

 

For Sauce: A (3-4 coriander roots, 5 cm lemongrass, 15 g ginger, 2 cloves garlic), 18 long red chillies, 1 small hot chilli, fish sauce, palm sugar and lime juice, 1 pack Nagano Shinshu soba noodles, fried shallots, Spanner crabmeat.

Directions

Thinly shred green papaya. Slice the shallots. Remove the seeds from the red chilli and cut into thin strips. Tear the mint and coriander into pieces. Cut the lime leaves into thin strips. Finely chop the lemongrass.

Put the ingredients A in a millstone and mash. Add the chopped red chilli, mash and season with fish sauce, palm sugar and lime juice.

Boil the Nagano Shinshu soba noodles, soak in cold water and place in a bowl.

Mix the salad and sauce in a bowl, add spanner crabmeat as you like.

Sprinkle fried shallots on top of the noodles and garnish with lime.
