Sake production in the Nara period was marked by underdeveloped quality control, resulting in delicious sake only about once in every 100 attempts. However, we combine years of craftsmanship with cutting-edge technology to consistently brew the award-winning “Prince Nagaya.”

In 1988, wooden tablets belonging to “Prince Nagaya,” an imperial prince from 1,300 years ago, were unearthed. These tablets described the lives of the aristocracy at the time, including references to sake. As a Nara brewery, we sought to recreate the sake from that era. After much trial and error, using the ancient brewing methods as our guide, we successfully reproduced this historical sake and named it “Prince Nagaya.”

 

Prince Nagaya is made with edible rice, which is considered difficult for producing delicious sake, and features an unusually high rice polishing ratio of 90%.

 

This sake represents a fusion of 1,300-year-old wisdom and techniques with our modern expertise.
